ETHAN WALLER
Ethan is an avid lover of outdoor open fire cooking and has been in professional rugby for 13 years. Ethan (virtually) met Phil during lockdown in 2020, talking about food on their respective podcasts. Soon after, an offline conversation lead to a metaphorical fire being lit, which triggered an obsession in outdoor cooking. Since then, Ethan has owned a wood-fired pizza trailer business and opened a successful restaurant, as well as cooking countless flame cooked meals for his own family. The experience of going from absolute beginner to borderline obsessed, regular outdoor “chef”, puts Ethan in a great position to help you on your journey as he’s done it, not so long ago.
PHIL ROBERTS
Phil has been cooking, taking photo's, doing demo's, pop ups and writing about food since he can remember. Featured regularly in BBQ Mag and other European publications such as GRILLR in the Netherlands. A lifetime of cooking experience mixed with a love for flames, meat and smoke make Phil the perfect guide to walk you through the jargon and into a world of year round, seasonally relevant live fire cooking. He is also really passionate about locally sourced food and butchery - If you want to break open his collection of butchery books all you have to do is ask!
